Quick and Easy Homemade Salsa

I've been meaning to make my own salsa, but always thought it was a long process, and I'm all about quick and easy.

So here is a delicious,  quick and easy salsa recipe that I found, and absolutely love, that I adapted from Autumn Calabrese's  Fixate cookbook.


Ingredients:
3 medium tomatoes
1 sweet onion
3 cloves garlic
1 roasted JalapeƱo
1 bunch cilantro
Juice from half a lime
Himalayan Sea salt

Directions:
Chop 2 tomatoes loosely, 1 jalepeno, and 3 garlic cloves, and add to a food processor. Pulse until blended and chopped well.

Chop up the sweet onion, the last tomato and the cilantro, and add to a bowl. Add in Himalayan Sea salt and lime juice and mix well. Combine the mixture from the food processor into the onion/tomato/cilantro mixture, and combine well.

Store in a sealed container and refrigerate until you're ready to serve.

Serve over Egg Muffins, or with corn tortilla chips.
